"Last Night's Chicken Curry" Pizza with a Mango Salsa

We all have this common problem of "last night's chicken". Whether it's chicken curried, rotisseried, fried, or baked, there are almost always leftovers. And once you refrigerate it, yesterday's crispy skin becomes, well, yesterday's news. The "Last Night's Chicken Curry" pizza is a refreshing way to put away yesterday's chicken in a fast, fresh and tasty way.

The best thing about this pizza is that you can make it your own. I don't really like pizza sauce, so I add hari chutney instead. For today's pizza I piled on bell peppers, tomatoes, onions, and fresh jalapenos. I also don't enjoy large chunks of chicken in my pizza, so I shredded the chicken from some leftover curry. Since I make my pizza pretty spicy, the fresh mango salsa adds a cool kick to this recipe.
Next time you're in a bind about what to make for dinner, pick up some dough from Trader Joe's, take out that leftover chicken, and make it a pizza night!

What you need:
Pizza:
  1. Fresh pizza dough (I use Trader Joe's fresh pizza dough balls. They are fresh and super cheap
  2. Corn meal/Flour - A couple of tablespoons to flour your surface
  3. Garlic powder - 1 tbsp(optional, I like to make my own garlic crust)
  4. Sliced toppings, anything you want. Don't go too crazy though or you'll end up with a soggy pizza.
  5. Pizza Sauce - 1 cup, I use hari chutney, pesto also works great.
  6. Shredded Chicken - 1/2 cup
  7. Shredded Cheese - 2 cups, Parmesan, Romano, Mozzarella cheese blend
  8. Pizza stone/large cookie sheet
Mango Salsa:
  1. Mango - 1, peeled and sliced (make sure it's ripe and sweet)
  2. Jalapeno - 1, remove seeds and finely chop.
  3. Red onion - 1/3 cup, finely diced
  4. Lime juice - 1 tbsp
  5. Fresh Ginger - 1 tsp, finely grated
  6. Salt and pepper, to season
What you do:
  1. Preheat oven to 400°F.
  2. Flour a pizza stone or cookie sheet, and let the dough rest and rise for 20 mins.
  3. In the meantime, chop up your vegetables and shred your chicken.
  4. After 20 mins, put corn meal or flour on the pizza stone to avoid the dough from sticking.
  5. Roll out the pizza into a 12'' circle, or rectangle if baking in a cookie sheet.
  6. Put the pizza base in the 400°F oven for 4-5 mins. 
  7. Spread the bottom of the pizza base with sauce or pesto or chutney.
  8. Add a fistful of cheese, then add the toppings and chicken.
  9. Add the remaining cheese on top.
  10. Using a pastry brush, brush the crust with butter and sprinkle some garlic powder.
  11. Bake in a 400°F for 15-20 mins or until the crust is golden brown.
  12. In this time, you can mix together all the ingredients for the mango salsa in a bowl and put it in the fridge.
Done! Cut your pizza and I like to put the salsa on the side so people can add as much as they want. WARNING: "Last Night's Chicken Curry" Pizza might be SO good that you actually use fresh chicken to make it.
