Simply Smashed Potatoes

Normal families make enough of a fuss over making the traditional Thanksgiving dinner. Well imagine making two Thanksgiving meals in the same day and you got yourself an Indian Thanksgiving. Along with the turkey, stuffing, mashed potatoes and pumpkin pie you add a rice dish, chicken, some vegetable curries, and a few Indian desserts and sweets. On top of that you invite every Indian family you know because whats the point in making a Thanksgiving spread that puts a Grand China buffet to shame without sharing?
...well at least that's how Thanksgiving went in my house growing up.

These "Simply Smashed Potatoes" are the perfect union of the two sides of my family's Thanksgiving: Aloo methi meets adult mashed potatoes, A.K.A Roasted red potatoes, smashed and topped with dried fenugreek leaves, lemon zest, and a dash of truffle oil.

(Makes 4-6 servings); Prep time: 15 mins; Total time: 45 mins

What you need:
  1. Small red potatoes, 1 lb.
  2. Kosher salt - 2-3 tsp
  3. Extra virgin olive oil - 2 tbsp
  4. Dried fenugreek leaves - 2 tbsp
  5. Peppercorn medly/black pepper- 1/4 tsp
  6. Zest of 1 lemon
  7. Truffle oil, optional
What you do:
  1. In a large pot, add the potatoes and enough water on medium-high heat.
  2. Add a spoon of kosher salt and bring the pot to a boil.
  3. Boil, uncovered, for 15-20 minutes until the potatoes are fork-tender.
  4. Toss the potatoes in a colander and run cold water through them to stop the cooking process.
  5. Preheat oven to 425 degrees Fahrenheit.
  6. Put the potatoes on the counter and smash with a small pan or potato masher.
  7. Put them on a cookie sheet sprayed with non-stick spray.
  8. Now drizzle olive oil over the potatoes and add the fenugreek leaves, pepper, lemon zest and some kosher salt. (Also being the spice freak that I am, I added a little paprika)
  9. Roast the potatoes in the oven for 8-10 minutes, or until they are golden brown. Broil for a couple of minutes towards the end.
  10. Before serving, take a fork and add a VERY small drizzle of truffle oil or lemon juice to the potatoes.
Done! One down, one hundred side dishes to go. Happy Thanksgiving!
